Healthy Overnight Blueberry French Toast

This blueberry french toast recipe is appropriate for low-calorie, low-cholesterol, low-fat, and ovo-lacto vegetarian diet regimens.


Ingredients:

  • 12 slices cinnamon bread, cubed

  • 5 eggs, beaten

  • 1.75 cups milk

  • 1 cup packed brown sugar, divided

  • 0.25 tsp ground cinnamon

  • 0.25 tsp ground nutmeg

  • 0.5 cup slivered almonds

  • 0.25 cup butter, melted

  • 2 cups fresh blueberries

Directions:

Place bread cubes in a greased 13 x 9 baking dish. In a bowl, combine the eggs, milk, 0.75 cup brown sugar, cinnamon, and nutmeg; pour over bread. Cover and refrigerate for 8 hours or overnight.


Remove from the refrigerator 30 min before baking. Preheat oven to 400oF. Sprinkle almonds over egg mixture. Combine butter and remaining brown sugar; drizzle over the top. Bake, uncovered, for 25 min. Sprinkle with blueberries. Bake 10 min longer or until a knife inserted near the center comes out clean.
