Healthy Corn Salsa
Corn Salsa is a fresh alternative to heavy tomato based salsas. This is salsa can be used as a dip or a healthy side dish!
Ingredients:
3 cobs of fresh corn
2 small tomatoes, chopped
½ small onion chopped
1 tsp butter
½ tsp chili powder
Salt and pepper
Directions:
Remove corn kernels from cob and cook in hot dry fry pan until slightly blackened, remove from pan and set aside.
Melt butter in pan and add onion, cook on medium heat until translucent, 3- 5 minutes.
Add tomatoes and chili powder and cook until warmed, about 3 minutes.
Toss in corn and add salt and pepper to taste.
