This deliciously simple recipe provides the fresh flavor of berries made with frozen mixed berries folded into a puff pastry crust.
Ingredients:
2.5 Cup frozen mixed berries, unsweetened
2 Tbsp granulated sugar
1 tsp lemon juice
1 Tbsp corn starch
1 sheet frozen puff pastry
1 tsp flour
2 Tbsp turbinado sugar
2 Tbsp milk
Cooking spray
Ice cream or whipped cream, if desired
Instructions
Thaw berries. Drain excess liquid and mix in corn starch, granulated sugar and lemon juice. Set aside
Thaw the puff pastry until it can be unfolded without breaking, about 20 minutes
Pre heat oven to 375 degrees
Coat a cookie sheet with cooking spray
On lightly floured surface, roll the puff pastry to a form a 9” circle, about ¼” thick
Carefully lift puff pastry onto prepared cookie sheet
Spoon berry mixture into the center of the pastry
Fold up sides of pastry circle overlapping to form an edge surrounding the berries, as shown in the photo
Brush the edge with a light coating of milk and sprinkle edge and berries with turbinado sugar
Bake in preheated oven for 30-35 minutes until crust is brown and berries are bubbly
Cool on cookie sheet for at least 10 minutes before cutting. Serve as is, or top with ice cream, or whipped cream.
