This rich and delicious breakfast is made the night before to be enjoyed on a busy morning. It offers a deep cocoa flavor with a hint of peanut butter and the crunch of nuts, seeds, and cacao nibs.  Packed with fiber and protein, these overnight oats make a hearty breakfast that helps keep hunger at bay until lunchtime.

Ingredients

  • ½ cup old fashioned oats

  • 2 tsp cocoa powder

  • 1 Tbsp agave

  • 1 Tbsp cacao nibs

  • ½ cup plain soymilk

  • 1 Tbsp hemp seeds

  • 1 Tbsp peanut butter

  • 2 Tbsp sliced almonds

  • ½ cup nonfat vanilla Icelandic (Skyr) or Greek yogurt

Instructions

  1. Add oats, cocoa powder, agave, cacao nibs, and soymilk to a mason jar or other container with a lid. Mix thoroughly, cover, and refrigerate overnight.

  2. When ready to serve, mix in hemp seeds, peanut butter, almonds, and yogurt.

Notes

  • These calculations use Siggi’s nonfat vanilla Skyr but any Greek yogurt or Skyr will work.

  • This recipe calls for almonds but chopped walnuts can be substituted.

  • Honey or maple syrup can be used instead of agave.

  • The nutrient information here assumes one serving ,but it may be enough for two.
