Served warm alongside a cup of coffee, this cinnamon-infused recipe might bring back memories of your grandmother’s kitchen.  Adapting this old-fashioned coffee cake recipe to muffins offers a delicious way to help keep your portions under control. 


Ingredients

  • 1 cup flour

  • ½ tsp baking powder

  • 1/4 tsp salt

  • 3/8 cup butter, softened

  • ½ cup white sugar

  • 1 egg

  • 1 tsp vanilla

  • ½ cup buttermilk

  • 2 tbsp cup chopped walnuts

  • 1 + ½ tsp cinnamon

  • 2 tbsp brown sugar


Instructions

  1. Preheat oven to 350 degrees. 

  2. Prepare muffin tin with cupcake liners or cooking spray

  3. Mix together walnuts, brown sugar and ½ tsp cinnamon, set aside

  4. Combine flour, salt, baking powder and 1 tsp cinnamon, set aside

  5. In large bowl, mix butter and white sugar until fluffy

  6. Add egg and vanilla to the butter and white sugar batter and mix until combined

  7. Add the flour mixture and the buttermilk to the batter mix until smooth 

  8. Spoon batter into each muffin cup to 1/3 full

  9. Using ½ of the walnut mixture, sprinkle a small amount onto each muffin

  10. Add remaining batter to muffin cups, then top with the other half of walnut mixture

  11. Bake in preheated oven for 20-25 minutes, until tops are golden

  12. Cool for at least 10 minutes before serving.


Notes:

  • This recipe can be made without an electric mixer by melting the butter first

  • If you don’t have a muffin tin, you can make this in a greased 8x8 pan, bake for 25-30 minutes, until toothpick inserted 1 inch from edge comes out clean. Cut into 8 pieces
