When you are craving something sweet, a summer peach is hard to beat! They are delicious served fresh, baked in a pie, and even grilled.
Grilled peaches can be a versatile addition to your next barbeque. Include them plain as a side dish, top them with goat cheese as an appetizer or make them a dessert by pairing them with a scoop of ice cream. Hearty enough to handle the heat of a barbeque, peaches are a healthy and delicious addition to any summer cookout.
Ingredients
2 peaches
2 tsp slivered almonds
1 ounce soft goat cheese
1 tsp honey
½ tsp butter, softened
Mint leaves
Instructions
Mix together the goat cheese and honey
Wash the peaches and cut them in half, remove the pit
Brush each half with softened butter
Place cut side down on grill, Cook for 2 minutes
Turn over and grill for 1 minute (use tongs to prevent breaking)
Remove from grill and add a dollop of honey goat cheese to the center of each half
Top with slivered almonds and mint leaves
Makes 1 servings
