Champagne Mocktail with Sugared Cranberries

Ring in a healthier new year or toast another celebration with this pretty, flavorful, bubbly drink that skips the alcohol. Add sugared cranberries for a stunning vibrant red garnish. 


Ingredients

For sugared cranberries:

  • ½ cup water

  • 1 cup white sugar

  • ½ cup fresh cranberries

For mock champagne:

  • 6 oz apple juice, chilled

  • 12 oz sparkling water


Instructions

Prepare sugared cranberries  (best to prepare a day ahead)

  1. Combine water with ½ cup of sugar in a small saucepan. 

  2. Warm on medium heat stirring until the mixture starts to simmer and the sugar is dissolved.

  3. Remove from heat and let cool slightly.

  4. Stir in the fresh cranberries and let set for 5 minutes.

  5. Remove the cranberries and place in a single layer on cooling rack over parchment paper. 

  6. Air dry for at least 20 minutes. They should be tacky but not wet.

  7. Pour the remaining ½ cup sugar onto a plate and spoon on the cranberries a few at a time, rotating until coated.

  8.  Remove sugared cranberries and place on a lined baking sheet. Dry for at least 30 minutes.  They can be stored at room temperature in a sealed container for 2-3 days.

Prepare mock champagne:

  1. Combine apple juice and sparkling water in a pitcher.

  2. Divide between 4 glasses.

  3. Garnish with sugared cranberries.
