What better way to welcome the freshness of spring than with strawberries.  This delicious strawberry cake can be made with fresh strawberries, but if they are not yet available in your area, frozen berries work well too. With every bite the crisp, crackly almond top gives way to a soft, custardy center.


Ingredients


  • 16 oz fresh or frozen strawberries

  • 2 large eggs

  • 1 1/3 cup flour

  • 1 ¼ tsp baking powder

  • 1 cup + 1 Tbsp sugar 

  • 1 stick unsalted butter, softened

  • ½ cup plain, nonfat Greek yogurt 

  • ½ tsp vanilla extract 

  • ¼ tsp almond extract 

  • ¼ cup sliced almonds

  • ¼ tsp salt

Instructions 

  1. Preheat oven to 350 degrees. Spray a 9-inch round pan with cooking spray and cut parchment paper to cover the bottom of the pan.

  2. Slice strawberries. If using frozen, defrost them first and drain off excess liquid before and after slicing.

  3. In a medium bowl, mix the flour, baking powder, and salt. Set aside.

  4. Combine butter and 1 cup sugar in a large bowl and mix until fluffy, about 5 minutes.

  5. Add eggs, one at a time, beating after each egg.

  6. Add vanilla and almond extract and mix well.

  7. Add reserved flour mixture and yogurt. Blend well, making sure to scrape the sides of bowl.

  8. Gently fold in strawberries.

  9. Spoon batter into prepared pan and smooth.

  10. Top with sliced almonds and the remaining Tbsp of sugar.

  11. Bake for 35 minutes, until toothpick inserted 1 inch from edge comes out clean.

  12. Cool before removing from pan.
