A Protein-Packed, Antioxidant-Rich Take on Strawberries & Cream

Indulging in a classic fruit and cream dessert doesn't require compromising your health goals. This simple recipe pairs vibrant mixed berries with a whipped topping made from full-fat skyr (Icelandic-style cultivated yogurt) and a splash of heavy cream. By whipping skyr into a velvety texture, you get all the luxurious mouthfeel of traditional whipped cream paired with a boost of protein, calcium, and live probiotic cultures—all while keeping added sugar down to just a fraction of a teaspoon per serving.


Ingredients 

  • 4 oz full-fat vanilla skyr or yogurt*

  • 2 oz heavy whipping cream

  • 1 tsp powdered sugar

  • 3 cups strawberries, raspberries, blueberries, and/or blackberries; any combination


Instructions

Combine yogurt and cream in a mixing bowl and beat with electric mixer on low speed for 30 seconds.

  1. Increase speed to high and beat for 2 minutes more.

  2. Mix in powdered sugar and beat for another 1 to 2 minutes until soft peaks form.

  3. Spoon 3/4 cup berries onto a plate or bowl and top with 3 Tbsp whipped yogurt cream.


Notes

* It is important to use a full-fat yogurt. This recipe uses Icelandic Provisions Extra Creamy Skyr whole milk yogurt, vanilla bean.

Editor’s Note- One of my favorite desserts! This dessert is appropriate for a low-calorie, low carb, and low saturated fat dietary regimen. It also provides a good source of fiber. Lacto-vegetarian recipe. 


Using Frozen Berries: If fresh berries are harder to find later in the season, don’t worry—frozen berries work beautifully in this dessert, too. Choose good-quality berries that were frozen at their peak, and you’ll still get plenty of their delicious flavor, nutrients, and antioxidant goodness.
